Sunset Cupcake Crunch

What color is a peach?  It’s a question I was asked during a summer camp coloring activity by eight year old, Lavita.  Before I could answer, seven year old, Amiya, responded by jumping up and down and declaring, “Oh, oh oh! It’s the color of a sunset.”   I created this recipe while thinking about them and the wonder  of a child’s response.  So much truer than justifying one color to describe the beauty of such a delicious summer treat.

I actually intended to make banana bread, but with only 2 bananas, I decided to experiment.  The recipe also works well if you substitute the sunset fruits for two cups of finely chopped strawberries (yes, I made another batch-they’re so good)!  The frosting is an extra treat, but realistically these are muffin-like and tasty on their own.

Banana-Peach (Sunset) and Polenta Cupcakes
Makes 12

1 1/4 c. all-purpose flour
1/4 c. polenta
1 tsp. baking powder
1 tsp. baking soda
3/4 c. granulated sugar
1/4 c. brown sugar
1 egg
1/4 c. butter or margarine, softened
1 1/2 tsp vanilla extract
2 very ripe bananas, mashed
1 c. finely chopped peaches

To Do:
1: Preheat oven to 350° F.
2: In a large bowl, sift together flour, polenta, baking powder and baking soda.
3: In another large bowl, cream the sugars with the egg and butter until completely blended.  Mix in vanilla extract and bananas.
4: Pour the sugar mixture into the bowl of flour and blend well. Fold in the peaches.  Divide the batter evenly (about 3/4 full) in a cupcake tin.  Bake 15-20 minutes or until a toothpick comes out clean.

Lemon Frosting

1/3 c. butter or margarine, melted
3 c. powdered sugar
2 1/2 tsp lemon juice
1/2 tsp lemon zest (optional)

To Do:
1: In a medium bowl, whip butter and 1 cup of sugar at a time.  Add lemon juice (and zest).  Mix well.
*If making this ahead of time, be sure to stir the frosting before applying it to the cakes.
